  • Prep time: 15 minutes | Cook time: 10 minutes | Servings: 2

  • Key Health Benefit: Rich in complex carbs to fuel active days, fiber for gut health, and iron-rich black beans combined with vitamin-C-packed bell peppers.

Ingredients:

  • 2 large whole-wheat or gluten-free tortillas

  • 1 cup cooked sweet potato (mashed or finely diced—great for steady liver glycogen and nervous system grounding)

  • 1/2 cup black beans (rinsed and drained—an excellent plant-based iron source)

  • 1/4 cup diced bell peppers or baby spinach

  • 1/2 cup grated sharp cheddar or mozzarella cheese (provides calcium for growing bones)

  • 1/2 tsp ground cumin and a pinch of garlic powder

  • 1 tbsp olive oil or butter for pan-frying

  • To serve: Fresh guacamole or salsa.

Instructions:

  1. Prepare the Filling: In a bowl, mix the mashed sweet potato, black beans, diced bell peppers, cumin, and garlic powder together until well combined.

  2. Assemble: Lay the tortillas flat. Spread the sweet potato and bean mixture evenly over one half of each tortilla. Sprinkle the grated cheese generously over the top.

  3. Fold & Crisp: Fold the tortillas in half to create half-moons.

  4. Pan-Fry: Heat the olive oil or butter in a skillet over medium heat. Place the quesadillas in the pan and cook for 3–4 minutes per side until the tortillas are golden brown and crispy, and the cheese inside is melted and gooey.

  5. Slice & Serve: Slice into triangles and serve warm with a side of fresh guacamole or salsa for dipping.
