  • Prep time: 15 minutes | Cook time: 25 minutes | Servings: 2–3

  • Key Health Benefit: Chickpeas provide plant-based phytoestrogens (isoflavones) and magnesium to support hormonal balance and sleep quality. Eggs deliver complete protein and choline for brain health, while turmeric and leafy greens fight oxidative stress and support bone density.

Ingredients:

  • 6 large pastured eggs

  • 1/4 cup milk of choice or full-fat yogurt

  • 1 cup cooked or canned chickpeas (rinsed and drained)

  • 2 cups fresh baby spinach or chopped kale

  • 1 small leek or green onion, thinly sliced

  • 1 clove garlic, minced

  • 1 tsp ground turmeric

  • 1/2 tsp cumin or smoked paprika

  • 2 tbsp extra-virgin olive oil or butter (divided)

  • 30g crumbled feta cheese or goat cheese (optional, for a boost of calcium)

  • Sea salt and freshly cracked black pepper to taste

  • To serve: A side of fresh cucumber and herb salad with a squeeze of lemon.

Instructions:

  1. Preheat & Prep: Preheat your oven to 180°C (350°F). Whisk the eggs and milk together in a medium bowl with a pinch of salt, pepper, turmeric, and cumin until smooth and vibrant golden.

  2. Sauté the Greens & Chickpeas: Heat 1 tablespoon of olive oil or butter in an oven-safe skillet over medium heat. Add the leek and garlic, cooking for 2 minutes until soft. Toss in the chickpeas and leafy greens, stirring gently until the greens are wilted (about 2–3 minutes).

  3. Pour & Set: Pour the whisked golden egg mixture evenly over the chickpea and green vegetable blend in the skillet. Shake the pan slightly to distribute everything.

  4. Add Cheese: Scatter the crumbled feta or goat cheese across the top. Let it cook undisturbed on the stovetop for 3–4 minutes until the edges begin to set.

  5. Bake to Perfection: Transfer the skillet straight into the preheated oven and bake for 15–18 minutes until the center is fully set and the top is lightly golden.

  6. Slice & Serve: Slice into wedges and serve warm with a crisp, refreshing green salad on the side.
