Key Health Benefit: High in bioavailable heme iron, Vitamin A, and copper to combat post-period fatigue, paired with Vitamin C to maximize mineral absorption.
Ingredients:
-
300g lamb or beef liver (sliced into thin, tender strips)
-
2 tbsp extra virgin olive oil or grass-fed ghee
-
3 cloves fresh garlic, minced
-
1 small red onion, thinly sliced
-
1 tbsp pomegranate molasses (nar ekşi)
-
Juice of 1/2 fresh lemon
-
A handful of fresh flat-leaf parsley, chopped
-
Sea salt and freshly cracked black pepper to taste
-
To serve: Warm sourdough bread or a bed of earthy roasted root vegetables.
Instructions:
-
Prepare the Liver: Pat the liver strips dry with a paper towel and season lightly with sea salt and black pepper.
-
Sauté the Aromatics: Heat the olive oil or ghee in a skillet over medium heat. Add the sliced red onions and sauté for 3–4 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
-
Quick Sear: Turn the heat up slightly. Add the liver strips to the pan in a single layer. Cook quickly for about 2–3 minutes per side. Tip: Do not overcook liver, or it will toughen; it should remain slightly pink and tender on the inside.
-
The Finishing Touch: Turn off the heat. Immediately drizzle the pomegranate molasses and fresh lemon juice over the liver, tossing gently so the pan juices emulsify into a rich, glossy glaze.
-
Serve: Garnish generously with fresh parsley and serve alongside warm bread or roasted roots.
